Mathieu Rostaing-Tayard (France), who trained under Pierre Gagnaire, Éric Briffard, Nicolas Le Bec, and Michel Portos, is now chef at Café Sillon in Lyon (voted Best Bistrot 2015 by the Guide Fooding), which he opened in 2014. After a two-year world tour and visits with chefs round the world (Peru, Italy, Japan, etc.), he has developed an inventive cuisine that blends French and foreign flavors and traditions.
